Per many requests, I put together a little sample of some of the things that I eat, and how to do it! Not only am I MC Hammer poor, but I am also eating healthy as a horse - although, I do not eat any Seabiscuits. These babies are super budget friendly, healthy, organic/natural (for the most part), low carb, and taste SO delish. A lot of people had asked me how I made a breadless "grilled cheese" - for this, I simply took a piece of cheese (I used light swiss, but any kind of cheese will work, I think) heated up a non stick pan, and literally cooked it in there by itself, until it was toasty. Tossed it with a little salt and VOILA! Its crispy, cheesy, and goes perfect with soup - without the carbby-guilt. I eat a lot of beef and seafood. Surprisingly, it is not that expensive if you know when to shop, what cuts to buy, and how to make it! Top round roast is what I usually purchase - give him some onions in there, dusts the meat in salt, pepper, and garlic powder, a little water and cover that baby in a foil sleeping bag - 325 for about 2 hours, you will have a ridiculously delicious hunk of moo that you can eat that night or even throw into sandwiches and tacos the next day. I've been trying to eat healthier too lately, and one thing I've been doing a lot is making BBQ pulled chicken and quinoa at the beginning of the week and putting them over salads for lunch - healthy and easy - not as creative as you though! haha
